These plants thrive in waterlogged soil but should be positioned no deeper than four inches below the water level. Remarkably adaptable, they can also flourish outside the water, given that their soil remains consistently moist. Known commonly as watercress, this plant is one of the oldest leaf vegetables and should be harvested only from clean water sources.

Larger plants (1 litre and above) can be positioned at deeper levels without the need for repotting.
